Our Signature Hot Sauces

The League's hot sauce recipes are complex when compared to other commercial sauces. In truth, most “craft” hot pepper sauces only have a handful of ingredients: chillies, vinegar, salt, and sugar. Some even cheat with the heat and use extract of capsaicin.

Our hot sauces begin with a high-quality chilli and vinegar base that is blended with a ground spice and a fresh herb core. They are then rounded out with a vegetable or fruit body and embellished with additional aromatics and botanicals to create unique and intense flavour accents.

Maximinous Max (St Lucian Hot Pepper Sauce)

Very Hot. Not for Beginners

Ingredients: Scotch Bonnets, Distilled pickling vinegar, Turmeric, Cloves, Garlic, Cilantro, Tomato Puree, Salt, Onions, Lemon Juice, Questions about your existence.

This is the original hot sauce recipe, exactly as made by Maximinous Francois. It’s based on Yellow Scotch Bonnet Peppers, fully seeded and is incredibly fragrant and distinct. Maximinous made it at home for his family to eat with their regular food, and used it like a ketchup. It’s probably why at the age of 1548 years old, Blemish - Maximinous’ Son - still looks so young.

This is currently the hottest sauce we produce and is therefore rated 10/10 on our scale.

This recipe is a competition winner and probably the most popular of all our hot sauces, It uses Pimenton (smoked paprika) and roasted capsicums to create a flavour that works really well with red meat and especially at a BBQ.

Flaming Banana (Banana Hot Pepper Sauce)

Hot. Think twice before abuse.

Ingredients: Green Chillies, Onions, Apple Cider Vinegar, Bananas, Cardamon Seeds, Cloves, Garlic, Cilantro, Salt, Lemon Juice, Passion, pleasure & surprises.

A personal favourite and another hot sauce competition winner. Fruit based hot sauces are common in tropical countries and work well with poultry & fish dishes. And pizza. And eggs. And hot dogs. And in a cheese sandwich. And just spooned straight out of the jar.

The green chillies used in this sauce can vary & subsequently so can the heat, but it generally sits about midway (5/10) on our heat scale.

Spanish Fly (Cayenne Pepper & Paprika Hot Sauce)

Mild. A great place to start

Ingredients: Cayenne Peppers, Spanish Sherry Vinegar, Paprlika, Red pointed Capciums, Cloves, Garlic, Oregano, Tomato Puree, Salt, Chalotts, Fire seduction & a few slaps.

This is the mildest sauce in the collection. It was created for Josepha Francois, the Spanish Matriarch of the family. The flavour is somewhat similar to chorizo (but without any meat content) and uses a similar set of spices. Josepha Francois still uses this sauce to this day and personally checks each new batch to make sure it tastes correct.

This is our gateway sauce and only gets a 2/10 on our heat scale
